Gondhoraj lebu is the lemon Bengal can smell from across the room: a knobbly little citrus with a perfume so strong that one grated rind fills the kitchen. In this curry it meets curd and cashew to make something bright, creamy and gently tangy.
Gondhoraj chicken is one of Kolkata's favourite restaurant dishes, and this paste brings it home with real Gondhoraj lemon zest and juice, green chilli and a little green cardamom.
Empty the 150 g pouch into a pan with 250 ml of water, add 250 g of the protein you love, then cover and cook on a low flame until tender. Chicken is the classic; fish and prawns take to it beautifully. It serves two, with steamed rice or pulao.

Step 1
Empty the 150 g pouch into a saucepan. Add 250 ml of water and mix well on high heat.

Step 2
Add 250 g of your preferred protein. Cover and cook on low heat until the protein is tender.

Step 3
Stir occasionally until the gravy reaches the desired consistency. Season and serve hot.
