Dalna is the curry Bengali homes make when they want to look after someone. It's gentle and ghee-scented, warm with cumin, coriander and black cardamom, with a soft gravy that never shouts and is always welcome.
Chhanar dalna, made with fresh chhana, is the classic, and paneer is just as good. Add a handful of green peas, the way we do in our photographs, and it tastes like a weekday lunch at home.
Empty the 150 g pouch into a pan with 120 ml of water, add 250 g of the protein you love and cook until done. It serves two, with steamed rice or hot rotis.

Step 1
Empty the 150 g pouch into a saucepan. Add 120 ml of water and mix well on high heat.

Add 250 g of your preferred protein and cook until fully done.

Stir occasionally until the gravy reaches the desired consistency. Season and serve hot.
